Unfortunately it doesn't look like there's any way to accomplish this in Windows 10 Mobile. Your best option is to use the Windows Feedback app to let Microsoft know you miss this feature. A quick search for "flip" brings up a number of results that you can upvote.

AFAIK there is no official statement from Microsoft to why that is. But from a usability point of view 5 (+/-2) items are the maximum number of items a normal person can process "on a single glance".
You can turn of Cellular connection by doing the following steps:
Go to Settings->Network & Wireless-> Mobile & Sim. Note - It will be Cellular & Sim for English US.
Near Sim 1 and Sim 2, you will find toggles to turn those SIM on and off.
As you asked this will turn of the entire cellular connection including talk, sms and mobile data.

By setting the date to one month later and restarting the phone, the 3 gb temporary files disappeared. So it seems you have to try using different dates.
I think that beyond speed, you need to consider the cluster size when formating the SD Card (using exFAT). The cluster size has an important role.
